Sugar-Free Date Cookies are a healthier alternative to traditional cookies, made with the natural sweetness of dates instead of refined sugar. Packed with oats, almond flour, and nuts, these chewy cookies are satisfying and nourishing.
Ingredients
1 cup pitted dates (about 12–15 dates)
1 cup rolled oats (gluten-free if needed)
1/2 cup almond flour
1/4 cup chopped nuts (e.g., walnuts, almonds, or pecans)
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1 egg
2 tablespoons coconut oil (or butter, melted)
2 tablespoons water (or more if needed)
Instructions
- Prepare the dates: Soak the dates in warm water for about 5 minutes to soften them. Drain and place them in a food processor. Process until they form a thick paste.
- Mix the dough: In a large bowl, combine the oats, almond flour, chopped nuts, cinnamon, and salt. Add the date paste, egg, vanilla extract, and melted coconut oil (or butter) and mix until well combined. Add 1-2 tablespoons of water if the dough is too dry.
- Shape the cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop out the dough and roll it into small balls (about 1 inch). Place them on the baking sheet and gently flatten them with your fingers or the back of a spoon.
- Bake the cookies: Bake for 10-12 minutes, or until golden brown around the edges. Keep an eye on them, as they can brown quickly.
- Cool and serve: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy once cooled, or store them in an airtight container.
Notes
For a sweeter treat, add sugar-free chocolate chips or cacao nibs.
Spice it up with a pinch of nutmeg or ginger.
For a coconut twist, stir in shredded unsweetened coconut.
