Delicious and fruity Strawberry Rice Krispie Treats made by combining melted marshmallows infused with freeze-dried strawberries and vanilla with crispy rice cereal and white chocolate chips for a sweet, chewy, and crunchy snack.

- 6 cups mini marshmallows
- 1/2 teaspoon vanilla extract
- 1/4 cup freeze-dried strawberries (about a 1.2 ounce bag), finely chopped or blended
- 6 cups rice krispies or crispy rice cereal
- 1 cup mini marshmallows (additional)
- 1 cup white chocolate chips
Instructions
- Prepare the Pan: Line a 9×9 inch pan with foil or parchment paper and grease it lightly with butter or nonstick cooking spray to prevent sticking.
- Melt Butter and Marshmallows: In a large pot or stockpot over low heat, add the butter and melt it. Once melted, add 6 cups of mini marshmallows and stir continuously until completely melted and smooth.
- Add Flavorings: Stir in the vanilla extract and chopped or blended freeze-dried strawberries until the mixture is evenly combined and the marshmallows are fully melted.
- Combine Cereal: Remove the pot from heat and immediately stir in the 6 cups of rice krispies cereal, mixing gently but thoroughly so that every piece is coated with the marshmallow mixture.
- Mix in Extras: Fold in the additional 1 cup of mini marshmallows and white chocolate chips, distributing them evenly throughout the mixture.
- Transfer and Set: Pour the mixture into the prepared pan and gently press it down with a spatula or your hands, being careful not to compress the treats too much, as this can make them dense and hard.
- Cool and Serve: Allow the treats to cool and set for 30 to 60 minutes at room temperature. Once firm, cut into 16 squares and serve.

- Do not press the mixture too firmly into the pan to keep the treats light and chewy.
- Freeze-dried strawberries add intense flavor without extra moisture.
- You can substitute white chocolate chips with regular or dark chocolate chips as desired.
