Instructions

  1. Make the Cookies: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the strawberry puree, egg, lemon zest, lemon juice, and vanilla extract. Beat until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be soft and slightly sticky. Using a cookie scoop or spoon, drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden and the center is set. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For the strawberry puree, blend fresh strawberries in a food processor or blender until smooth. You can also use store-bought strawberry puree if you want to save time.
