Description

Ingredients

Egg Mixture

  • 3 cups egg whites
  • 1 cup cottage cheese (Good Culture 2% low fat recommended)
  • 1 cup grated mozzarella cheese
  • Salt and pepper to taste

Vegetables

  • 1/4 cup diced roasted or raw red bell pepper
  • 1/4 cup finely chopped spinach

Other

  • Boiling hot water (enough to fill baking sheet about halfway up silicone mold)
  • Cooking spray (non-stick spray)


Instructions

  1. Preheat Oven and Prepare Mold: Preheat your oven to 350°F (175°C). Generously coat a silicone cupcake mold with non-stick cooking spray to ensure easy release of the egg bites.
  2. Prepare Vegetables: Finely chop the roasted or raw red bell pepper and spinach. Set these aside for later use.
  3. Blend Egg Mixture: In a blender, combine the egg whites, cottage cheese, and mozzarella cheese. Blend on high for about 60 seconds until the mixture becomes bubbly, which helps create that light and fluffy texture.
  4. Assemble Egg Bites: Place the silicone mold on a baking sheet. Distribute the chopped veggies evenly into each cavity. Then, pour the blended egg white mixture into each cavity, filling them about three-quarters full. Sprinkle each with salt and pepper to your taste.
  5. Add Water Bath and Bake: Pour boiling hot water into the baking sheet so it reaches halfway up the sides of the silicone mold. This water bath ensures gentle, even cooking. Bake in the preheated oven for 30-35 minutes, or until the tops feel firm to the touch.
