These Spinach Feta Pinwheels are savory, flaky pastries filled with spinach, feta cheese, and aromatic herbs. Baked to golden perfection, they make an elegant appetizer or satisfying snack that’s easy to assemble and always pleasing.
Ingredients
1 sheet puff pastry (9″×9″), thawed
1 cup fresh spinach, finely chopped (or thawed, squeezed frozen spinach)
½ cup crumbled feta cheese
¼ cup grated Parmesan cheese
1 clove garlic, minced
1 tbsp fresh dill or parsley, chopped (or 1 tsp dried)
1 tsp lemon zest (optional)
1 egg, beaten (for egg wash)
Optional: black pepper or red pepper flakes
Instructions
- Preheat oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
- In a bowl, mix spinach, feta, Parmesan, garlic, herbs, lemon zest, and pepper.
- Roll puff pastry into a 9″×9″ square. Lightly flour if needed.
- Spread the filling evenly over the pastry, leaving a border along one edge.
- Roll tightly into a log from filled edge toward clean edge. Seal the seam with egg wash.
- Slice into 1″–1½″ pinwheels. Place cut-side up on the baking sheet.
- Brush tops with beaten egg. Bake for 15–18 minutes until golden and puffed.
- Cool for 2–3 minutes before serving. Serve warm or at room temperature.
Notes
Swap dill with basil, oregano, or chives for a flavor change.
Use goat cheese, ricotta, or mozzarella instead of feta.
Enhance with sautéed onions, peppers, or olives.
Spice it up with red pepper flakes or jalapeño.
Cut smaller for mini pinwheels and adjust bake time.
