Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs
1 packet taco seasoning (or homemade taco seasoning)
1 can (14.5 oz) diced tomatoes with green chilies (optional for extra flavor)
1/2 cup chicken broth or water
1 tablespoon lime juice
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Soft flour or corn tortillas (for serving)
Toppings such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, and salsa
Instructions
- Place the chicken breasts or thighs in the slow cooker.
- Sprinkle the taco seasoning, cumin, garlic powder, onion powder, salt, and pepper evenly over the chicken. Add the lime juice, chicken broth (or water), and the can of diced tomatoes with green chilies (if using).
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
- Once cooked, shred the chicken directly in the slow cooker using two forks. Stir to mix the chicken with the juices and seasonings.
- Warm the tortillas and fill them with the shredded chicken. Add your favorite taco toppings like shredded lettuce, diced tomatoes, cheese, sour cream, and salsa.
Notes
Frozen chicken can be used, but you may need to increase the cooking time by an hour.
Chicken thighs tend to stay juicier and more flavorful when slow cooked.
For a spicier version, add diced jalapeƱos, red pepper flakes, or hot sauce.
Leftover chicken can be stored for up to 3-4 days in an airtight container or frozen for 2-3 months.
