Description

Slow Cooker Birria Ramen is a comforting fusion dish combining tender, flavorful birria-style beef cooked low and slow with savory broth and quick-cooked ramen noodles. This recipe uses a slow cooker for easy, hands-off preparation, resulting in a rich, hearty bowl perfect for any time you crave a warm, satisfying meal with classic birria spices enhanced by the chewy texture of ramen noodles. Optional fresh toppings like soft boiled egg, cilantro, onion, lime, and jalapeno add brightness and depth of flavor.

Ingredients

Main Ingredients

  • 2 pounds stew beef
  • 1 small white onion, chopped
  • 3 cloves garlic, minced
  • 1 ounce birria seasoning
  • 4 cups water or low sodium beef stock

Noodles and Toppings

  • 10.75 ounce ramen noodles
  • Soft boiled egg (optional)
  • Cilantro (optional)
  • Chopped onion (optional)
  • Lime wedges (optional)
  • Jalapeno slices (optional)

Instructions

  1. Combine ingredients in slow cooker: Place the stew beef, chopped onion, minced garlic, birria seasoning packet, and water or low sodium beef stock into the basin of a 6-quart slow cooker. This will form the flavorful birria base.
  2. Cook the beef: Cover the slow cooker and cook on LOW for 4 to 6 hours, or until the beef is tender and easily shredded. This slow cooking melds flavors and softens the meat perfectly.
  3. Add ramen noodles: About 20 minutes before you plan to serve, add the ramen noodles directly into the slow cooker. Cover again and cook until the noodles are tender, approximately 15 to 20 minutes.
  4. Serve with toppings: Ladle the birria ramen into bowls and garnish with your choice of toppings such as soft boiled egg, fresh cilantro, additional chopped onion, lime wedges, and jalapeno slices for extra flavor and heat.

Notes

  • Whole Foods, Costco, or most markets typically carry ramen noodles, but if unavailable, use three packets of Maruchan ramen noodles without the seasoning packets.
  • Store leftovers covered in the refrigerator for up to 3 days to maintain freshness.
  • Either water or beef broth can be used as the cooking liquid; if using beef broth, opt for low sodium to balance the saltiness of the birria seasoning packet.
  • For those who prefer extra spice, add a squirt of Sriracha to the finished ramen bowl.
