Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin with non-stick cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine the whole wheat flour, all-purpose flour, sugar, unsweetened cocoa powder, baking soda, ground cinnamon, salt, and mini semi-sweet chocolate chips. Stir well to evenly distribute all ingredients.
- Mix Wet Ingredients: In a separate medium-sized bowl, beat together the eggs, Greek yogurt (or sour cream), milk, applesauce (or oil or mashed banana), and vanilla extract until smooth and well combined.
- Combine Wet and Dry: Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently just until the batter is moistened; avoid over-mixing to keep muffins tender and light.
