Ingredients

1 lb (450g) large shrimp, peeled and deveined

2 bell peppers (any color), sliced

1 large onion, sliced

2 tablespoons olive oil

1 tablespoon lime juice (plus extra for serving)

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Flour or corn tortillas (for serving)

Toppings: Sour cream, guacamole, salsa, shredded cheese, or fresh lime wedges


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray for easy cleanup.
  2. In a large bowl, toss the shrimp with 1 tablespoon of olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Toss the sliced bell peppers and onion with the remaining 1 tablespoon of olive oil and a pinch of salt and pepper.
  3. Spread the seasoned shrimp, bell peppers, and onion evenly on the prepared baking sheet in a single layer.
  4. Roast in the preheated oven for 10-12 minutes, or until the shrimp are pink and opaque, and the peppers and onions are tender and slightly caramelized. Stir halfway through the cooking time for even roasting.
  5. Remove from the oven and garnish with freshly chopped cilantro and extra lime wedges. Serve the fajitas in warm tortillas with your favorite toppings like sour cream, guacamole, salsa, and shredded cheese.

Notes

Feel free to add other vegetables like zucchini, mushrooms, or cherry tomatoes to the sheet pan for more texture and flavor.

If you love heat, add extra cayenne pepper, sliced jalapeños, or a drizzle of hot sauce to give the fajitas an extra kick.

Swap the shrimp for chicken, beef, or even tofu for a different protein option.
