Description

Enjoy a vibrant Mediterranean dish featuring tender tilapia fillets simmered in a smoky roasted red pepper sauce. Quick to prepare and full of fresh flavors, this recipe is perfect for both weeknight dinners and special occasions.

Ingredients

Fish

  • 4 tilapia fillets (about 6 oz each)
  • 2 tbsp olive oil (for cooking fish)
  • Salt and pepper to taste

Roasted Pepper Sauce

  • 2 large red bell peppers
  • 3 garlic cloves
  • 2 tbsp olive oil (for roasting peppers)
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Roast the peppers: Preheat the oven to 400°F (200°C). Slice the red bell peppers, then toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them out evenly on a baking sheet and roast for about 20 minutes, until the peppers are softened and slightly charred.
  2. Prepare the pepper sauce: Place the roasted peppers into a blender along with the garlic cloves and freshly squeezed lemon juice. Blend until you achieve a smooth, vibrant sauce. Taste and adjust seasoning with salt and pepper as needed.
  3. Cook the tilapia: Heat a tablespoon of olive oil in a skillet over medium heat. Season the tilapia fillets with salt and pepper. Cook the fillets for 3 to 4 minutes on each side, until they develop a golden brown crust and are flaky in texture.
  4. Simmer with sauce: Pour the roasted pepper sauce over the cooked tilapia in the skillet. Reduce heat slightly and let it simmer together for about 1 minute to meld the flavors.
  5. Serve: Remove from heat and serve the tilapia fillets topped with the smoky roasted pepper sauce. Enjoy immediately for best flavor and texture.

Notes

  • You can substitute tilapia with other mild white fish like cod or haddock if preferred.
  • For a spicier version, add a pinch of red pepper flakes to the sauce before blending.
  • This dish pairs well with rice, quinoa, or crusty bread to soak up the sauce.
  • Leftover sauce can be refrigerated in an airtight container for up to 3 days and used as a spread or dip.
