Ingredients

1 cup Medjool dates, pitted

1/4 cup coconut milk (full-fat or light, depending on your preference)

1 tablespoon coconut nectar or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt (or more to taste)

1/4 teaspoon cinnamon (optional, for added warmth)

2 tablespoons coconut oil (optional, for a creamier texture)


Instructions

  1. Soak the dates: If the dates are not soft, soak them in warm water for 10-15 minutes to soften. Drain the water before using.
  2. Blend the ingredients: In a food processor or high-speed blender, combine the pitted dates, coconut milk, coconut nectar or maple syrup, vanilla extract, sea salt, and cinnamon (if using). Blend until smooth and creamy. You may need to scrape down the sides of the bowl occasionally to ensure everything is evenly mixed.
  3. Add coconut oil (optional): For a creamier, richer texture, add the coconut oil and blend again until fully incorporated. This step is optional, but it adds a velvety finish to the caramel.
