Ingredients
1 rotisserie chicken, shredded (about 3 cups)
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced

4 cups chicken broth
1 cup heavy cream
1/2 cup milk (or more for desired consistency)
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and pepper to taste
1 tablespoon all-purpose flour (optional, for thicker soup)
Fresh parsley or chives for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes, or until softened. Add the garlic and sliced mushrooms and cook for 5-7 minutes, until the mushrooms release their moisture and begin to brown.
- If you prefer a thicker soup, sprinkle the flour over the vegetables and stir to combine. Let it cook for 1-2 minutes to eliminate the raw flour taste. Skip this step for a thinner soup.
- Pour in the chicken broth, heavy cream, and milk. Stir to combine, then bring to a simmer over medium heat. Add the thyme, rosemary, salt, and pepper. Let the soup simmer for 10-15 minutes to meld the flavors.
- Stir in the shredded rotisserie chicken and cook for an additional 5 minutes to heat the chicken through.
- Taste and adjust seasoning if needed, adding more salt, pepper, or herbs as preferred.
- Ladle the soup into bowls and garnish with fresh parsley or chives, if desired. Serve with a side of crusty bread or crackers.

For a thicker soup without flour, simmer the soup longer to reduce and thicken naturally.
