Russian Dressing
- ½ cup mayonnaise
- 3 tablespoons ketchup or ketchup-style chili sauce

Reuben Tacos
- 10 8-inch flour taco tortillas
- 1 cup Russian dressing (from recipe above)
- 1 pound leftover corned beef, diced (or 1 pound deli corned beef thickly sliced)
- 1 cup shredded Swiss cheese
- 1 cup sauerkraut, very well drained
- Fresh dill, optional for garnish
Instructions
- Prepare the Russian Dressing: Add mayonnaise, ketchup or ketchup-style chili sauce, prepared horseradish, paprika, Worcestershire sauce, and salt into a small bowl. Stir vigorously until all ingredients are thoroughly combined. Cover and chill in the refrigerator until ready to serve, allowing flavors to meld.
- Preheat the Oven: Set your oven to 350°F (175°C) and let it fully preheat. Meanwhile, lay the 8-inch flour tortillas flat on a baking sheet to prepare for assembly.
- Assemble the Tacos: Spread about 2 tablespoons of the chilled Russian dressing down the center of each tortilla. Add an even layer of diced corned beef over the dressing, followed by a generous sprinkle of shredded Swiss cheese on top.
- Bake the Tacos: Place the baking sheet with the assembled tortillas in the preheated oven. Bake for 5 to 8 minutes, or until the cheese melts and the corned beef is heated through, creating a warm, melty filling.
- Add Sauerkraut and Garnish: Remove the baking sheet from the oven carefully. Top each taco with a spoonful of well-drained sauerkraut and add a pinch of fresh dill if desired. Serve the tacos warm for the best flavor and texture.

- If you don’t have leftover corned beef, substitute with 1 pound deli corned beef sliced thicker than usual sandwich slices for better texture.
- Russian dressing can be swapped out for Thousand Island dressing if you prefer an easier-to-find, slightly different flavor.
