- 1/2 ounce white rum
- 1 ounce gourmet raspberry syrup

- 3 fresh raspberries
- 3 ounces piña colada cocktail mix
- 4 ice cubes
- 1 heart-shaped marshmallow (for garnish)
Homemade Piña Colada Cocktail Mix
- 3 ounces cream of coconut
- 3 ounces raspberry juice or 1/2 to 3/4 cup frozen raspberries with 1–2 tablespoons water or pineapple juice for blending
- 4 ounces pineapple juice
- 1 ounce fresh lime juice
Instructions
- Mash the Raspberries: Place three fresh raspberries into a cocktail tin and firmly mash them using a muddler to release their juice and flavor.
- Add Liquids: Pour in the white rum, gourmet raspberry syrup, RumChata, and piña colada cocktail mix into the tin with the mashed raspberries.
- Shake with Ice: Add four ice cubes to the tin. Securely close the lid and shake vigorously for 30 seconds to chill and blend the ingredients thoroughly.
- Strain and Serve: Strain the cocktail mixture through a fine-mesh sieve into a serving glass to remove raspberry seeds and ice shards for a smooth drink.
- Garnish: Thread a heart-shaped marshmallow through a cocktail stick and place it on the rim of the glass for a charming presentation.
- Enjoy: Serve immediately and enjoy your refreshing Raspberry Piña Colada Cocktail.
Notes
- For the homemade piña colada mix, combine cream of coconut, raspberry juice (or blended frozen raspberries with water/pineapple juice), pineapple juice, and fresh lime juice in a blender. Blend until smooth for about 30 seconds.
- Store the homemade mix in a jar in the refrigerator and shake well before each use, as natural separation may occur.
- This cocktail can be customized with different types of rum or adjusted sweetness by altering the amount of raspberry syrup.
- For a non-alcoholic version, omit the white rum and RumChata and replace with coconut cream and additional pineapple juice.
