Ingredients
1 cup ricotta cheese (preferably whole milk)
2 tbsp heavy cream (or milk)
1 tbsp honey (optional, for sweetness)
1/4 tsp vanilla extract (optional)
Pinch of salt
2–3 ripe peaches, pitted and diced
1 tbsp olive oil
1 tbsp fresh basil, chopped (or mint, if preferred)
1 tsp balsamic vinegar (optional, for a tangy kick)
1 loaf of baguette or crusty bread, sliced
Olive oil for brushing
Salt and pepper to taste
Instructions
- Preheat the oven or grill to 400°F (200°C).
- Make the whipped ricotta: In a bowl, combine the ricotta cheese, heavy cream, honey (if using), vanilla extract, and a pinch of salt. Whisk until smooth and creamy. Adjust sweetness or texture as needed.
- Prepare the peaches: In a separate bowl, combine the diced peaches, chopped basil (or mint), olive oil, and balsamic vinegar (if using). Toss gently and season with salt and pepper to taste. Let sit for a few minutes to allow flavors to meld.
- Toast the bread: Place the sliced bread on a baking sheet and brush with olive oil. Toast in the oven for 5-7 minutes, or grill for 1-2 minutes on each side until golden brown and crispy.
- Assemble the bruschetta: Spread a generous layer of whipped ricotta on each toasted bread slice. Top with the peach mixture and spoon some of the juices over the ricotta for added flavor.
- Serve immediately: Garnish with extra basil or a drizzle of honey if desired. Serve fresh for the best flavor and texture.
Notes
You can add a spicy kick by mixing in red pepper flakes or finely chopped jalapeño into the peach mixture.
To make it a more substantial meal, add grilled chicken, shrimp, or steak on top of the ricotta before adding the peach mixture.
If you prefer a vegan version, substitute the ricotta with a plant-based alternative and use maple syrup instead of honey.
