Ingredients
For the Pumpkin Base
- 1 can (15 oz) pumpkin puree
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 cup whole milk
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp salt
For the Topping
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup chopped pecans
For the Pecan Sauce
- 1 cup packed brown sugar
- 1 1/2 cups boiling water
- 1/2 cup chopped pecans
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with non-stick spray or butter to prevent sticking and ensure even cooking.
- Make Pumpkin Base: In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, milk, egg, vanilla extract, ground cinnamon, nutmeg, ginger, cloves, and salt. Whisk thoroughly until the mixture is smooth and creamy. Pour this evenly into the prepared baking dish.
- Prepare Topping: In a separate bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Stir in the melted butter until a thick batter forms. Carefully spread this batter evenly over the pumpkin mixture in the baking dish.
- Add Sugar and Pecans: Evenly sprinkle the remaining brown sugar over the cobbler topping. Without stirring, slowly pour the boiling water over the entire dish to create the pecan sauce beneath the topping. Finally, scatter the chopped pecans on top to add crunch and flavor.
- Bake the Cobbler: Place the dish in the preheated oven and bake for 45 to 50 minutes. The cobbler is done when the topping turns golden brown and the pecan sauce is bubbling beneath.
- Cool and Serve: Allow the cobbler to cool for 10 to 15 minutes before serving to let the sauce thicken and flavors meld beautifully.
Notes
- Do not skip pouring the boiling water over the sugar topping as it is crucial for forming the delicious pecan sauce underneath.
- Adjust the sweetness by modifying the amount of brown sugar according to your preference.
- Serve warm, optionally with vanilla ice cream or whipped cream for an extra indulgent dessert.
