Ingredients

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract to the butter mixture and beat until smooth.
- Stir in the melted chocolate chips until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- In a separate small bowl, mix the peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
- Scoop out 1 tablespoon of cookie dough and flatten it into a disk in the palm of your hand.
- Place about 1 teaspoon of the peanut butter filling in the center of the dough, then top with another tablespoon of dough to form a ball, sealing the peanut butter inside.
- Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges of the cookies are set and the tops are slightly cracked. The centers may still look soft, but they will firm up as they cool.
