One Pot Creamy Vegetable Soup is a comforting, creamy, and hearty soup made with a variety of fresh vegetables, perfect for chilly days. It’s easy to make and requires just one pot, making it a convenient and satisfying meal.
Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
2 medium potatoes, peeled and diced
1 zucchini, diced
1 cup spinach (fresh or frozen)
4 cups vegetable broth (or chicken broth)
1 cup heavy cream (or coconut milk for dairy-free version)
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
Salt and pepper to taste
1 tablespoon lemon juice (optional)
Fresh parsley or chives for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the garlic, carrots, celery, and potatoes, and cook for another 5-6 minutes.
- Pour in the vegetable broth, add the dried thyme and basil, and season with salt and pepper. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
- Optionally, blend the soup for a smoother texture using an immersion blender or by transferring half of the soup to a blender.
- Stir in the heavy cream (or coconut milk) and spinach. Cook for an additional 3-4 minutes until spinach wilts and soup is creamy. Adjust seasoning with salt and pepper if necessary.
- For added brightness, stir in the lemon juice. Serve hot and garnish with fresh parsley or chives if desired.

Add protein by incorporating chicken, beans, or lentils.
For a spicier version, add red pepper flakes or hot sauce.
Make the soup vegan by using coconut milk and vegetable broth.
For a thicker soup, puree some of the vegetables or add potatoes.
