Description
Mustard Potato Poppers are crispy on the outside and soft on the inside, combining tangy mustard with creamy mashed potatoes for a crowd-pleasing snack or appetizer.
Ingredients
2 cups mashed potatoes (preferably chilled or leftover)
1/4 cup Dijon mustard (or yellow mustard)
1/2 cup breadcrumbs (for coating)
1/4 cup grated Parmesan cheese (optional)
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional)
1 egg, beaten
1/4 cup flour (for dusting)
Vegetable oil (for frying) or cooking spray (for baking)
Optional Dipping Sauce:
1/4 cup mayonnaise
1 tablespoon mustard
1 teaspoon honey (optional)
Instructions
- Prepare mashed potatoes if not using leftovers. Let them cool.
- Mix potatoes with mustard, garlic powder, black pepper, and Parmesan cheese if using.
- Form into 1-2 inch balls.
- Set up coating bowls: one with flour, one with beaten egg, and one with breadcrumbs.
- Coat each ball in flour, then egg, then breadcrumbs.
- To Fry: Heat oil in skillet and fry balls for 2-3 minutes per side until golden. Drain on paper towels.
- To Bake: Preheat oven to 400°F (200°C). Place balls on a baking sheet, spray with cooking spray, and bake 15-20 minutes, flipping halfway through.
- Mix dipping sauce ingredients in a bowl.
- Serve poppers hot with sauce, garnished with parsley.
Notes
Add shredded cheese to the mixture for cheesy poppers.
Use spicy mustard or cayenne for heat.
Use any potato type; russets provide fluffier texture.
