Description

These Mini Crustless Broccoli Quiches are perfect for a nutritious breakfast or brunch. Easy to make and packed with tender broccoli, savory cheese, and fluffy eggs, they’re a delicious, low-carb option that can be prepared ahead and enjoyed throughout the week.


Ingredients

Vegetables

  • 2 cups broccoli florets, cut into bite sized pieces (or 1 cup cooked broccoli)

Wet Ingredients

  • 8 large eggs
  • 1/2 cup milk (your favorite)
  • 1 tablespoon olive oil

Cheese & Seasonings

  • 1/2 cup grated cheddar cheese (or your favorite)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)


Instructions

  1. Preheat & Cook Broccoli: Preheat the oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add broccoli florets and cook for 5 minutes or until tender. Remove skillet from heat.
  2. Prepare Egg Mixture: In a large measuring cup or bowl, whisk together the eggs, milk, grated cheddar cheese, salt, and black pepper until fully combined.
  3. Assemble Quiches: Generously spray 12 silicone muffin cups or a muffin pan with cooking spray. Evenly divide the cooked broccoli into the muffin cups.
  4. Add Egg Mixture: Pour the egg mixture evenly over the broccoli in each muffin cup.
  5. Bake: Bake the mini crustless quiches in the preheated oven for 13-15 minutes, or until the quiches are set with a slight wobble in the center.
  6. Cool & Serve: Remove from oven and cool quiches on a wire rack for 10 minutes. Carefully remove from muffin molds and serve warm or at room temperature.

Notes

  • Use prepped broccoli in a microwaveable bag for a time-saving shortcut. Cook according to package instructions, then chop when cool enough to handle.
