Instructions

- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar, vanilla extract, cocoa powder, and semi-sweet chocolate chips (if using). Mix until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Assemble the Bites: Spoon or pipe the cheesecake filling into each muffin cup over the chocolate crust, filling them to the top. Smooth the tops with a spatula or the back of a spoon.
- Chill the mini chocolate cheesecake bites in the refrigerator for at least 4 hours, or overnight, to allow them to set.
- Serve: Once the bites are chilled and firm, remove them from the muffin tin and serve. Optionally, garnish with chocolate shavings, whipped cream, or a drizzle of melted chocolate before serving.
