Description

Mini Chocolate Cheesecake Bites are a delicious, bite-sized dessert that combines creamy cheesecake and rich chocolate in one indulgent treat. These mini cheesecake bites are made with a smooth chocolate base and a velvety, tangy cheesecake filling. Perfect for parties, special occasions, or as a fun, bite-sized dessert, these little treats will satisfy your chocolate cravings without being too heavy.

Ingredients

For the Chocolate Crust:

1 1/2 cups chocolate cookie crumbs (like Oreos or chocolate graham crackers)

1/4 cup melted butter

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1 cup heavy cream

2 tablespoons unsweetened cocoa powder (for the chocolate flavor)

1/4 cup semi-sweet chocolate chips (optional, for added richness)

Instructions

  1. Prepare the Chocolate Crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter. Stir until the mixture is well combined and the crumbs are evenly coated.
  2. Spoon about 1 tablespoon of the crust mixture into each mini muffin cup (lined with paper liners). Press the mixture down with the back of a spoon to form a firm crust layer.
  3. Place the muffin tin in the fridge while you prepare the cheesecake filling, to set the crust.
  4. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Add the powdered sugar, vanilla extract, cocoa powder, and semi-sweet chocolate chips (if using). Mix until fully incorporated.
  6. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  7. Assemble the Bites: Spoon or pipe the cheesecake filling into each muffin cup over the chocolate crust, filling them to the top. Smooth the tops with a spatula or the back of a spoon.
  8. Chill the mini chocolate cheesecake bites in the refrigerator for at least 4 hours, or overnight, to allow them to set.
  9. Serve: Once the bites are chilled and firm, remove them from the muffin tin and serve. Optionally, garnish with chocolate shavings, whipped cream, or a drizzle of melted chocolate before serving.

Notes

Top the cheesecake bites with a raspberry or cherry for a fresh, fruity twist.

Drizzle melted chocolate or caramel sauce on top for an extra layer of flavor.

Add a small amount of instant coffee to the chocolate filling to enhance the chocolate flavor.
