Description

Ingredients

2 cups cooked chickpeas (or 1 can, drained and rinsed)

1 cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled (optional for a vegan version)

1/4 cup fresh parsley, chopped

For the dressing:

3 tbsp olive oil

2 tbsp lemon juice (about 1 lemon)

1 tsp dried oregano

1/2 tsp garlic powder

Salt and pepper to taste


Instructions
