- Prepare the Mixture: In a large bowl, combine the ground chicken, finely chopped red onion, minced garlic, chopped parsley, chopped mint, and dried oregano. Add the lemon zest, beaten egg, breadcrumbs, and crumbled feta cheese if using. Season the mixture with salt and pepper, then mix thoroughly until well incorporated, taking care not to overmix to keep the patties tender.
- Form the Patties: Divide the chicken mixture into 6 to 8 equal portions. Shape each portion into a patty about 1/2 inch thick and place them on a plate, ready for cooking.
- Cook the Patties: Heat a drizzle of olive oil in a large skillet over medium-high heat. Add the patties to the skillet, making sure not to overcrowd the pan. Cook each patty for 4 to 5 minutes per side until golden brown and an internal temperature of 165°F (74°C) is reached. Work in batches if necessary.
