Description

Ingredients

4 large croissants (store-bought or homemade)

1/2 cup almond flour

1/4 cup powdered sugar

1/4 cup unsalted butter, softened

1/4 teaspoon vanilla extract

1 tablespoon matcha powder

2 tablespoons milk or heavy cream

1 egg (for egg wash)

1/4 cup sliced almonds (for topping)

1 tablespoon honey or simple syrup (optional, for glazing)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Make the almond filling: In a medium bowl, mix almond flour, powdered sugar, softened butter, vanilla extract, and matcha powder until smooth. Add milk or heavy cream and stir until creamy.
  3. Slice each croissant in half lengthwise, leaving them connected at the bottom.
  4. Spread the matcha almond paste generously on the inside of each croissant.
  5. Brush the top of the croissants with egg wash (beaten egg with a splash of water) for a golden, shiny finish.
  6. Sprinkle sliced almonds on top for crunch.
  7. Place croissants on a parchment-lined baking sheet and bake for 12-15 minutes, or until golden brown and crispy.
  8. Once baked, optionally brush the croissants with honey or simple syrup for extra sweetness and shine.
