Ingredients
Cake Balls
- 1 box Keto Vanilla Cake Mix
- 1/2 cup Keto Vanilla Icing
Coating and Decoration
- 1 cup Keto Chocolate Chips
- 1 cup Keto White Chocolate Chips
- Keto or Regular Sprinkles (Christmas themed recommended)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the cake.
- Prepare Cake: Follow the instructions on the keto vanilla cake mix box to prepare the batter, then spread it evenly into a well greased 9×13 inch baking dish.
- Bake Cake: Bake the cake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before proceeding.
- Crumble Cake: Once cooled, crumble the cake into small pieces in a large mixing bowl.
- Mix with Icing: Add the 1/2 cup of keto vanilla icing to the crumbled cake and stir thoroughly to combine the mixture evenly.
- Form Cake Balls: Roll the mixture into evenly shaped cake balls using your hands, ensuring they are compact and uniform in size.
- Chill Cake Balls: Place the cake balls on a parchment lined plate or platter and freeze them for 2 hours to firm up.
- Melt Chocolate Chips: Put the keto chocolate chips into a microwave-safe bowl and heat in 30-second intervals, stirring between each until completely melted and smooth.
- Dip Cake Balls in Chocolate: Dip half of the chilled cake balls into the melted chocolate, then place them on a parchment lined baking sheet.
- Add Sprinkles: Immediately sprinkle the dipped cake balls with Christmas themed or keto-friendly sprinkles before the chocolate sets.
- Melt White Chocolate Chips: Repeat the melting process with the white chocolate chips in a microwave-safe bowl.
- Dip Remaining Cake Balls: Dip the remaining cake balls in the melted white chocolate and place them on a parchment lined baking sheet.
- Chill Cake Balls: Return all the decorated cake balls to the freezer or fridge and chill until the chocolate coatings have fully set.
