London Fog Cake is a soft, moist layer cake inspired by the popular London Fog latte. Infused with Earl Grey tea and paired with a creamy Earl Grey buttercream, this elegant dessert balances delicate floral notes, subtle citrus, and sweet vanilla. Ingredients
For the Cake:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
1 1/2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup milk
3 Earl Grey tea bags (steeped in milk, then cooled)
For the Earl Grey Buttercream:
1 cup unsalted butter, softened
3 1/2 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
2 Earl Grey tea bags (contents finely ground)
Optional Garnish: Drizzle of honey or a sprinkle of dried lavender
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- Warm milk and steep Earl Grey tea bags for 10 minutes. Remove tea bags and cool milk.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter, oil, and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
- Alternate adding dry ingredients and tea-infused milk, mixing until smooth.
- Divide batter evenly between cake pans and bake 25–30 minutes, or until a toothpick inserted comes out clean. Cool 10 minutes before removing from pans. Let cool completely.
- Make the Buttercream: Beat butter until fluffy. Gradually add powdered sugar, then mix in cream, vanilla, and finely ground Earl Grey tea until smooth.
- Assemble Cake: Place one cake layer on a serving plate, spread with buttercream, then top with the second layer. Frost top and sides with remaining buttercream. Garnish with honey drizzle or lavender if desired.
Notes
Add a thin layer of honey or custard between cake layers for extra richness.
Use mascarpone whipped cream instead of buttercream for a lighter version.
Decorate with candied citrus peel for a beautiful finish.
For best results, use high-quality Earl Grey tea with strong bergamot flavor.
