Description

Lazy Girl Pecan Pie Bars offer all the deliciousness of traditional pecan pie but in an easy, bar form. With a buttery shortbread crust and a gooey pecan filling, these bars are the perfect sweet treat for any occasion, requiring minimal effort while delivering maximum flavor.


Ingredients

1 1/2 cups all-purpose flour

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

Pinch of salt

1 cup light corn syrup

1/2 cup packed brown sugar

1/4 cup unsalted butter, melted

3 large eggs

1 1/2 cups pecans, chopped or whole

1 tsp vanilla extract

1/4 tsp salt


Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. For the crust: In a medium bowl, mix together the flour, melted butter, sugar, and salt until well combined. Press into the bottom of the baking dish. Bake for 12-15 minutes until golden brown. Remove from the oven and set aside.
  3. For the pecan filling: In a large mixing bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla, and salt until smooth. Stir in the pecans.
  4. Pour the pecan filling over the baked crust, spreading it evenly. Return to the oven and bake for 25-30 minutes, until golden brown with a slight jiggle in the center.
  5. Cool completely before slicing into bars.
  6. Serve as-is or with whipped cream or ice cream for extra indulgence.

Notes

For a chocolate twist, add mini chocolate chips to the pecan filling.

To make a spicier version, add a pinch of cinnamon or nutmeg to the filling.
