Ingredients
Vegetables
- 4 medium zucchinis, sliced
- 1 sweet onion, finely chopped
Cheese
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Other Ingredients
- 3 large eggs
- 1 tsp garlic powder
- 1 cup seasoned breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Sauté Onions: In a skillet over medium heat, warm the olive oil. Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes, which brings out its natural sweetness.
- Add Zucchini and Garlic: Add the sliced zucchinis and sprinkle the garlic powder over them. Continue sautéing for another 3-4 minutes until the zucchini softens slightly but still retains a bit of bite.
- Mix Egg Mixture: In a separate bowl, whisk together the eggs along with salt and pepper to incorporate the flavors evenly.
- Combine Ingredients: Transfer the sautéed vegetables into a large bowl. Add the shredded mozzarella and cheddar cheese as well as the whisked egg mixture. Gently mix everything together until well combined.
- Assemble and Top: Pour the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the seasoned breadcrumbs evenly on top for a crunchy golden finish.
- Bake: Place the dish into the preheated oven and bake for 30-35 minutes or until the casserole is set and the topping is golden brown. Remove from oven and allow to cool slightly before serving.
Notes
- You can substitute gluten-free breadcrumbs if you need a gluten-free option.
- For extra flavor, feel free to add fresh herbs like basil or parsley to the mixture before baking.
- If you prefer a sharper taste, swap cheddar for aged or smoked varieties.
- Make sure not to overcook the zucchini during sautéing to retain some texture in the casserole.
- This casserole is delicious served hot or at room temperature and pairs well with fresh salad or grilled meats.
