Ingredients
Liquid Ingredients
- 1 cup (240ml) cranberry juice
- 1 tablespoon (15ml) lemon juice
- 1 cup (240ml) water
- 1 tablespoon (15ml) rose water
Dry Ingredients
- 2 cups (400g) granulated sugar
- 1/2 cup (65g) cornstarch
- Powdered sugar for dusting
Optional Ingredients
- 1/4 cup (30g) chopped dried cranberries
- 1/4 cup (30g) pistachios
Instructions
- Prepare Pan: Line an 8×8-inch baking dish with parchment paper, ensuring some overhang for easy removal. Lightly dust the parchment with powdered sugar to prevent sticking.
- Mix Cornstarch and Water: In a small bowl, whisk together 1/2 cup (65g) cornstarch and 1 cup (240ml) water until smooth. Set this mixture aside for later use.
- Dissolve Sugar in Juice: In a medium saucepan over medium heat, combine 1 cup (240ml) cranberry juice, 2 cups (400g) granulated sugar, and 1 tablespoon (15ml) lemon juice. Stir constantly until the sugar fully dissolves.
- Incorporate Cornstarch Mixture: Gradually whisk the cornstarch-water mixture into the cranberry mixture. Lower the heat to low and continuously stir the mixture until it thickens and develops a glossy appearance, about 10 to 15 minutes.
- Add Rose Water and Optional Ingredients: Stir in 1 tablespoon (15ml) rose water, adjusting to taste. If desired, fold in 1/4 cup (30g) chopped dried cranberries or pistachios for extra flavor and texture.
- Set the Turkish Delight: Pour the thickened mixture into the prepared pan, spreading it evenly. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight until firm.
- Cut and Dust: Once set, lift the Turkish delight from the pan using the parchment paper overhang. Dust generously with powdered sugar, then use a sharp knife to cut into small squares.
- Coat the Pieces: Toss the cut squares in additional powdered sugar to fully coat all sides, preventing them from sticking together.
