Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup honey
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1 cup fresh peaches, peeled and finely chopped
1/4 cup cream cheese, softened
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1 tablespoon honey (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat together the softened butter and honey until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
- Gently fold in the chopped peaches.
- Divide the batter evenly between the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
- For the frosting, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar, 1/2 cup at a time, until the frosting is smooth and fluffy.
- Mix in the vanilla extract and honey. Once the cupcakes are completely cool, frost them generously with the cream cheese frosting.
- Serve and enjoy!
Notes
Peach Jam or Preserves: For extra peach flavor, add a dollop of peach jam or preserves to the center of each cupcake before baking.
Cinnamon: Add a pinch of ground cinnamon to the batter for a warm, spiced flavor that complements the peaches.
Lemon Zest: Add lemon zest to the batter or frosting for a fresh, citrusy kick.
Gluten-Free: Substitute the all-purpose flour with a 1:1 gluten-free flour blend to make these cupcakes gluten-free.
Other Fruits: Substitute peaches with other fruits like apricots or plums for a different fruity twist.
