Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 cup honey

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1 cup fresh peaches, peeled and finely chopped

1/4 cup cream cheese, softened

1/2 cup unsalted butter, softened

3 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon honey (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together the softened butter and honey until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the chopped peaches.
  7. Divide the batter evenly between the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  9. For the frosting, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar, 1/2 cup at a time, until the frosting is smooth and fluffy.
  10. Mix in the vanilla extract and honey. Once the cupcakes are completely cool, frost them generously with the cream cheese frosting.
