Description

Ingredients

34 lb beef roast (chuck roast or sirloin tip roast works well)

1/4 cup honey

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon Dijon mustard

1 teaspoon ground black pepper

1 teaspoon salt

1 teaspoon dried thyme (or rosemary for a different flavor)

1/2 cup beef broth (or water for a lighter option)

1/4 cup balsamic vinegar (optional for extra depth of flavor)


Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the beef roast dry with paper towels to ensure a good sear. Rub the roast with salt, black pepper, and dried thyme on all sides to season it evenly.
  3. In a small bowl, whisk together honey, olive oil, minced garlic, soy sauce, Dijon mustard, and balsamic vinegar (if using). This will be your glaze.
  4. Heat a large oven-safe skillet or roasting pan over medium-high heat. Add a little olive oil, then sear the beef roast on all sides until browned (about 2-3 minutes per side). This step locks in the flavor and creates a nice crust on the meat.
  5. Once seared, brush half of the honey glaze over the top and sides of the beef roast.
  6. Transfer the beef roast to the oven and roast for 1.5 to 2 hours, or until it reaches your desired level of doneness. A meat thermometer should read 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (65°C) for medium-well. Baste the roast with more of the honey glaze every 30 minutes to ensure a rich, caramelized coating.
  7. Once the roast is done, remove it from the oven and let it rest for 10-15 minutes. This helps the juices redistribute, keeping the meat tender and juicy.
  8. Slice the beef roast against the grain and serve with your favorite sides. Drizzle any remaining honey glaze over the sliced meat.

Notes

Replace the cheddar cheese with other types like Monterey Jack, Gruyère, or a blend of cheeses for a different flavor.

For a vegetarian version, replace the BBQ chicken with sautéed mushrooms or roasted vegetables.

Use Granny Smith apples for a tart contrast or Honeycrisp apples for a sweeter flavor.
