Description

These Healthy Almond Joys are a delicious, guilt-free alternative to the classic candy bars. Made with a shredded coconut base sweetened naturally with maple syrup or honey and topped with rich, melted chocolate and whole almonds, they offer a perfect balance of chewy, sweet, and crunchy textures. Perfect for freezer snacks or a treat anytime, these bites are easy to make and customizable with your favorite chocolate.


Ingredients

Base

  • 2 1/2 cups unsweetened finely shredded coconut
  • 5 tbsp maple syrup or honey
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract (optional but recommended)
  • Pinch of sea salt (optional but recommended)

Chocolate Topping

  • 1 cup chocolate bars, chopped or chocolate chips (see post for recommendations)
  • 2 tsp coconut oil (optional, helps thin the chocolate for easier dipping)
  • Raw almonds


Instructions

  1. Make the coconut base: Combine the shredded coconut, maple syrup or honey, melted coconut oil, vanilla extract, and a pinch of sea salt in a food processor. Process for about 40 seconds until the mixture becomes sticky and tacky, but be careful not to over-process as the coconut can release excess oil.
  2. Form the base into shapes: Divide the coconut mixture into a mini muffin pan, pressing it firmly into each cup to pack it down well. Alternatively, form the mixture into rectangular bars by hand or shape into balls for classic Almond Joy bars.
  3. Melt the chocolate: In a microwave-safe bowl, combine the chopped chocolate and coconut oil. Heat in 30-second increments, stirring well after each until smooth and fully melted. If preferred, melt the chocolate using a double boiler instead of the microwave.
  4. Add the topping: Spoon or dip chocolate over the coconut base, completely covering it. Use the back of a spoon to smooth the chocolate over each bite. Immediately place a raw almond on top of each one.
  5. Freeze to set: Place the prepared bites or bars in the freezer. Mini muffin bites need about 3-4 hours to set, while bars firm up after 30-60 minutes before dipping and then an additional 2 hours after coating. Once set, store the treats in an airtight container in the fridge or freezer for best texture and freshness.
  6. Serving suggestion: If stored in the freezer, let the Almond Joys sit at room temperature for 5-10 minutes before enjoying to soften slightly for optimal flavor and texture.
