Description

This Grilled Flank Steak Caprese with Balsamic Dressing is a flavorful, high-protein, and low-carb meal that combines smoky grilled flank steak with fresh cherry tomatoes, creamy mozzarella balls, fragrant basil, and a sweet-tangy balsamic glaze. Perfect for summer grilling, this recipe is ideal for both entertaining guests and quick weeknight dinners.

Ingredients

Steak Marinade

  • pounds flank steak
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Salad and Dressing

  • 2 cups cherry tomatoes
  • 8 ounces fresh mozzarella balls
  • ½ cup fresh basil, chopped
  • 3 tablespoons balsamic glaze (or reduced balsamic vinegar)

Instructions

  1. Marinate the Steak: In a zip-top bag or shallow dish, combine olive oil, minced garlic, salt, and black pepper. Add the flank steak and coat it thoroughly with the marinade. Refrigerate for at least 1 hour, or up to 8 hours, to let the flavors infuse.
  2. Preheat and Grill: Preheat your grill to medium-high heat. Remove the steak from the marinade and place it on the grill. Cook for 4-5 minutes per side, or until you reach your desired level of doneness.
  3. Rest and Slice: Once grilled, let the steak rest for 5–10 minutes to retain its juices. Then slice the steak thinly against the grain to ensure tenderness.
  4. Prepare Caprese Salad: In a bowl, combine cherry tomatoes, fresh mozzarella balls, and chopped basil. Drizzle a little olive oil over the mixture and season with a pinch of salt. Toss gently to combine.
  5. Assemble and Drizzle: Arrange the sliced steak alongside the Caprese salad on a serving platter. Just before serving, drizzle everything with the balsamic glaze for a sweet and tangy finish.

Notes

  • Always slice flank steak against the grain to keep it tender and easier to eat.
  • If fresh mozzarella balls are unavailable, you can substitute with slices from a large mozzarella ball.
  • For homemade balsamic glaze, reduce balsamic vinegar with a touch of honey over low heat until it thickens.
