Description

Delight in these fresh and flavorful Greek Veggie Pita Wraps, loaded with crunchy vegetables, creamy hummus, tangy feta cheese, and zesty Greek dressing. Perfect for a quick, healthy lunch or light dinner, these wraps combine traditional Mediterranean flavors in a convenient, handheld meal.

Ingredients

Wraps and Base

  • 4 Greek style pitas, white or wheat
  • 4 oz hummus

Vegetables

  • ½ cup romaine lettuce, chopped
  • 2 Roma tomatoes, diced
  • ½ red onion, sliced thinly
  • 1 English cucumber, chopped (peeled if desired)

Toppings

  • 4 tablespoons crumbled feta cheese
  • 4 tablespoons sliced black olives
  • 4 tablespoons Greek dressing

Instructions

  1. Prepare Vegetables. Thinly slice and dice the red onion. Quarter and slice the cucumber, peeling the skin first if preferred. Chop the romaine lettuce and dice the tomatoes to create fresh, crisp veggie toppings.
  2. Add Toppings to Pitas. Lay the pitas flat on a clean surface and spread each one evenly with 3 tablespoons of hummus as the base layer to add creaminess and flavor.
  3. Assemble Wraps. Top each hummus-spread pita with chopped romaine, diced tomatoes, sliced red onion, chopped cucumber, crumbled feta cheese, and sliced black olives. Drizzle with Greek dressing to add a tangy finish.
  4. Serve. Fold the pitas like tacos and enjoy immediately for a fresh and satisfying meal.

Notes

  • You can use plain hummus or any flavored hummus of your choice to customize the wraps.
  • For added flavor, try using tzatziki sauce instead of or alongside the Greek dressing.
  • Instead of flat pitas, you can use pocket pitas, opening and stuffing them with the ingredients if preferred.
