Ingredients

Potatoes

  • 2 and a half pounds baking potatoes, peeled and cut into eighths

Marinade

  • 1 and half cups chicken broth
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp. dried oregano (or 2-3 tbsp. fresh oregano)
  • 1 tsp. salt
  • Fresh ground pepper to taste
  • Sprinkle of paprika (optional)


Instructions

  1. Prepare Potatoes: Peel the potatoes and cut them into thick wedges, roughly into eighths. Rinse thoroughly under cold water to remove excess starch, then drain well.
  2. Make Marinade: In a 13×9 inch baking dish, combine chicken broth, olive oil, lemon juice, minced garlic, oregano, salt, and fresh ground pepper. Stir these ingredients together to create a flavorful marinade.
  3. Coat Potatoes: Add the potato wedges to the baking dish with the marinade. Toss gently to ensure all the potato pieces are evenly coated with the lemony mixture.
  4. Bake Potatoes: Place the dish uncovered into a preheated oven at 350°F (175°C). Bake for 1 and a half hours, allowing the potatoes to cook until they are tender inside and crispy on the edges. Test doneness by piercing a potato wedge with a fork; if it’s not quite tender, bake for an additional 15 minutes.
  5. Rest and Serve: For the best flavor and texture, let the potatoes sit for 10 minutes after baking before serving. Optionally, sprinkle paprika on top to add a subtle smoky color and taste.

Notes

  • You can use any type of potatoes such as Yukon Gold, Russets, red potatoes, or fresh new potatoes from your garden.
  • If using fresh new potatoes from the garden, washing and leaving the skin on is recommended for texture and nutrition.
