Description

These Stay Puft Marshmallows are a fun and whimsical tribute to the classic Ghostbusters character, Stay Puft Marshmallow Man. Soft, gooey, and perfectly sweet, these homemade marshmallows are inspired by the marshmallow giant from the movie and are the perfect Halloween treat or geeky snack for any Ghostbusters fan. These marshmallows are airy, pillowy, and coated in a light dusting of powdered sugar, making them a fun, marshmallowy delight that’s perfect for roasting, snacking, or gifting.


Ingredients

1/4 cup cold water

1 cup granulated sugar

1 cup light corn syrup

1/4 teaspoon salt

2 teaspoons pure vanilla extract

1 packet (about 2 1/2 teaspoons) unflavored gelatin

1/2 cup water (for gelatin)

1/2 cup powdered sugar (for dusting)

1/4 cup cornstarch (for dusting)

Red and blue food coloring (optional, for decoration)

1 Stay Puft Marshmallow Man cookie cutter (optional, for shaping)


Instructions

  1. Prepare the Gelatin: In a small bowl, sprinkle the gelatin over 1/2 cup of cold water. Let it sit for about 5 minutes to bloom and soften.
  2. Make the Syrup: In a medium saucepan, combine the granulated sugar, corn syrup, salt, and 1/4 cup of cold water. Bring it to a boil over medium-high heat, stirring occasionally. Once it starts to boil, reduce the heat to low and continue boiling for about 8-10 minutes or until the mixture reaches 240°F (115°C) on a candy thermometer.
  3. Whip the Marshmallow Base: While the syrup is boiling, pour the bloomed gelatin into a stand mixer bowl (or a large mixing bowl if using a hand mixer). Once the syrup reaches the right temperature, carefully pour it into the mixer bowl with the gelatin (be cautious, as the syrup is extremely hot). Turn the mixer on low speed and gradually increase to high. Whip the mixture for about 10-15 minutes until it becomes thick, glossy, and holds stiff peaks.
  4. Flavor and Color: Add the vanilla extract and mix for another 30 seconds to combine. If desired, divide the marshmallow mixture into separate bowls and add a few drops of red or blue food coloring to make it colorful and festive. You can swirl the colors together for a fun marbled effect.
  5. Prepare the Pan: In a separate bowl, combine the powdered sugar and cornstarch. Lightly grease an 8×8-inch square baking dish (or a similar-sized pan) with cooking spray, then dust it generously with the powdered sugar and cornstarch mixture to prevent sticking.
  6. Pour and Set: Pour the whipped marshmallow mixture into the prepared pan. Use a spatula to smooth the top into an even layer. Let the marshmallows set at room temperature for at least 4 hours, or overnight, until firm.
  7. Cut and Shape: Once set, dust the top of the marshmallow slab with more powdered sugar and cornstarch. If you’re using a Stay Puft Marshmallow Man cookie cutter, press it gently into the marshmallow slab to cut out marshmallow figures. Alternatively, cut the marshmallows into squares using a sharp knife and dust the edges with more powdered sugar and cornstarch to prevent sticking.
  8. Serve or Store: Serve your Stay Puft Marshmallows immediately, or store them in an airtight container for up to 1 week.

Notes

For extra fun, roll the marshmallows in crushed graham crackers or chocolate chips.

If you prefer a classic look, skip the food coloring and use cocoa powder for a “toasted” effect.
