Description

Ingredients

1 medium head of cauliflower, cut into florets

2 cups mushrooms (button, cremini, or your preferred type), sliced

3 tablespoons olive oil

4 garlic cloves, minced

1/2 teaspoon dried thyme

1/2 teaspoon paprika

Salt and pepper, to taste

Fresh parsley or thyme, for garnish (optional)


Instructions

  1. Cut the cauliflower into florets and slice the mushrooms. Set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cauliflower, season with salt, pepper, paprika, and thyme. Sauté for 7-10 minutes until the cauliflower is golden and tender but still slightly firm.
  3. Add the remaining tablespoon of olive oil and sliced mushrooms. Cook for another 5-7 minutes, until the mushrooms are tender and their moisture has evaporated.
  4. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  5. Adjust seasoning with more salt and pepper if needed. Garnish with fresh parsley or thyme if desired.
  6. Serve immediately as a side dish or with your favorite protein.

Top with Parmesan or feta cheese for extra richness.
