Description
Creamy, frozen yogurt bars swirled with rich peanut butter and studded with crunchy peanut chunks—perfect for a refreshing, protein-packed snack or healthy treat.
Ingredients
2 cups plain or vanilla Greek yogurt (whole-milk for creamier texture)
½ cup natural peanut butter (creamy or crunchy)
2–3 tablespoons honey or maple syrup, to taste
1 teaspoon pure vanilla extract
2 tablespoons chopped peanuts or peanut butter chips
Optional: 1 tablespoon chia seeds or flaxseed for texture
Instructions
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a bowl, whisk together yogurt, honey or maple syrup, and vanilla extract until smooth.
- Spread half of the yogurt mixture into the pan. Warm peanut butter slightly and drizzle half over the yogurt. Swirl gently with a toothpick or knife.
- Spread the remaining yogurt mixture on top. Drizzle remaining peanut butter and swirl again.
- Sprinkle chopped peanuts or peanut butter chips on top and press lightly.
- Cover and freeze for at least 4 hours until firm.
- Lift out using parchment, slice into 12 bars using a hot knife, and serve.
Notes
Use almond, cashew, or sunflower seed butter as a substitute.
Add melted dark chocolate or jam for extra flavor.
Make mini bars by cutting smaller portions or using a smaller pan.
To avoid freezer burn, wrap tightly and store in airtight container.
Thaw slightly before serving for softer texture.
