Description
These Frozen Peanut Butter Yogurt Bars are a delicious and nutritious treat combining creamy Greek yogurt and rich peanut butter, sweetened naturally with honey or maple syrup. Enhanced with optional toppings like mini chocolate chips, nuts, or fresh fruit, they freeze into satisfying, protein-packed bars perfect for a refreshing snack or dessert.
Ingredients
For the Base:
- 2 cups plain Greek yogurt (or any yogurt of your choice)
- ½ cup creamy peanut butter (or almond butter)
- ¼ cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- Pinch of salt
For the Topping (optional):
- ¼ cup mini chocolate chips
- ¼ cup chopped nuts (e.g., almonds, walnuts, or peanuts)
- Fresh fruit (e.g., sliced bananas or strawberries)
Instructions
- Mix the Ingredients: In a mixing bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and well combined.
- Taste and Adjust: Taste the yogurt and peanut butter mixture. Adjust sweetness by adding more honey or maple syrup if desired, mixing thoroughly after each addition.
- Line the Pan: Prepare an 8×8-inch square baking dish by lining it with parchment paper, leaving some overhang on the sides. This will make it easier to lift the bars out once frozen.
- Spread the Mixture: Pour the yogurt mixture into the lined pan and spread it evenly using a spatula to create a uniform thickness.
- Add Toppings: If using toppings, sprinkle mini chocolate chips, chopped nuts, or fresh fruit evenly over the surface of the mixture, pressing them in gently to adhere.
- Freeze the Bars: Place the pan in the freezer and freeze for at least 3 to 4 hours, or until the mixture is completely firm.
- Cut into Bars: When frozen solid, remove the bars from the pan by lifting the parchment paper overhang. Transfer to a cutting board and cut into squares or rectangles using a sharp knife.
- Serve and Store: Serve the bars immediately for a refreshing treat, or store them in an airtight container in the freezer for up to several weeks.
Notes
- Use Greek yogurt for added protein and creaminess. Full-fat or low-fat yogurt can be used depending on preference.
- Adjust the sweetness to taste, especially if your yogurt or peanut butter is already sweetened.
- Optional toppings add texture and flavor variation; feel free to customize with your favorites.
- Store bars in an airtight container in the freezer to prevent freezer burn.
- Allow bars to sit at room temperature for a few minutes before eating to soften slightly for easier biting.
