Description

This Easy Garlic Fried Rice with Chili Oil is a quick and flavorful dish perfect for a speedy meal. Using day-old jasmine rice, fragrant garlic, fresh eggs, and a touch of chili oil, it blends savory and spicy notes for a satisfying and comforting fried rice experience, ready in just 15 minutes.

Ingredients

Main Ingredients

  • 3 cups cold, day-old cooked jasmine rice
  • 3 large eggs
  • 15-20 cloves garlic, minced
  • 2 scallions, chopped (separate white and green parts)
  • 1 cup frozen vegetables (or fresh chopped veggies)
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon white sugar
  • ½ teaspoon salt (adjust to taste)
  • 1 teaspoon white pepper (adjust to taste)
  • 3 tablespoons neutral oil (such as vegetable or canola oil)
  • Chili oil (homemade or store-bought), for drizzling

Instructions

  1. Scramble the Eggs: Heat 1 tablespoon of neutral oil in a large skillet or wok over medium-high heat. Beat the 3 eggs in a bowl, then pour into the hot pan. Gently scramble the eggs until just cooked through but still soft. Transfer the eggs onto a plate and set aside.
  2. Sauté Aromatics: Add 2 tablespoons of neutral oil to the same skillet or wok. Sauté the minced garlic along with the white parts of the chopped scallions until fragrant and lightly golden, being careful not to burn the garlic.
  3. Add Rice and Vegetables: Add the cold day-old rice and frozen vegetables to the skillet. Stir well to break up any rice clumps. Then, pour in the light soy sauce, oyster sauce, white sugar, salt, and white pepper. Stir-fry everything together for a few minutes until the rice is evenly coated with the sauces and heated through.
  4. Combine Eggs and Green Onions: Return the cooked scrambled eggs to the skillet. Add the green parts of the chopped scallions. Toss everything so it combines thoroughly. Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
  5. Finish with Chili Oil and Serve: Remove the skillet from heat. Drizzle chili oil generously over the fried rice to add a spicy kick. Serve the garlic fried rice hot and enjoy immediately.

Notes

  • Using day-old cold rice is essential to prevent the fried rice from becoming mushy.
  • Feel free to swap vegetables based on preference or availability.
  • Adjust the amount of chili oil depending on your spice tolerance.
  • For a vegetarian version, substitute oyster sauce with vegetarian mushroom sauce or soy sauce.
  • Ensure garlic is sautéed gently to avoid bitterness.
