Ingredients
To Season the Fish
- 3 Fish Fillets
- 1 teaspoon Cajun Seasoning
- ½ teaspoon Salt
- ½ teaspoon Blackpepper
- 1 teaspoon Italian Seasoning
- 1 teaspoon Garlic Powder
- 3 tablespoon Olive oil
For the Sauce
- ¼ cup Butter
- 1 tablespoon Lemon Juice
- ½ tablespoon Hot sauce
- ½ teaspoon Fresh thyme, finely chopped
- ½ teaspoon Fresh rosemary, finely chopped
- ½ teaspoon Fresh parsley, finely chopped
- ¼ cup Water or broth or White wine
- Pinch of Salt and pepper to taste
Instructions
- Pat Dry the Fish: Pat the fish fillets dry with a paper towel to remove excess moisture, which helps in getting a nice sear when cooking.
- Prepare the Seasoning: In a bowl, combine the Cajun seasoning, salt, black pepper, Italian seasoning, and garlic powder. Stir these ingredients together well.
- Season the Fish: Sprinkle the seasoning mixture generously on both sides of the fish. Gently pat the seasoning into the fish so it adheres well.
- Heat the Oil: Place a pan over medium heat and add the olive oil. Allow the oil to heat until shimmering but not smoking.
- Sear the Fish: Place the seasoned fish fillets into the pan and sear each side for about 5 minutes, depending on the thickness of the fillets, until the fish is fully cooked and flakes easily with a fork.
- Remove Cooked Fish: Take the fish out of the pan and set it aside. Discard any burnt bits from the pan to prevent bitterness in the sauce.
- Make the Garlic Butter Sauce: Melt the butter in the same pan over low heat. Add lemon juice, hot sauce, fresh thyme, rosemary, parsley, and water (or broth/white wine). Simmer the sauce gently for 2 minutes, adjusting seasoning as needed.
- Baste the Fish: Return the cooked fish to the pan. Spoon the garlic butter sauce over the fish, basting for about 1 minute to allow the flavors to meld.
- Serve: Remove the fish from the pan and serve immediately with your choice of sides, such as rice, vegetables, or salad.
