Description

This Easy Fish in Garlic Butter Sauce is a flavorful and quick seafood dish featuring tender fish fillets seasoned with a blend of Cajun and Italian spices, seared to perfection, and drizzled with a rich garlic butter sauce infused with fresh herbs and a hint of lemon and hot sauce. Perfect for a simple yet impressive meal any night of the week.

Ingredients

To Season the Fish

  • 3 Fish Fillets
  • 1 teaspoon Cajun Seasoning
  • ½ teaspoon Salt
  • ½ teaspoon Blackpepper
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • 3 tablespoon Olive oil

For the Sauce

  • ¼ cup Butter
  • 1 tablespoon Lemon Juice
  • ½ tablespoon Hot sauce
  • ½ teaspoon Fresh thyme, finely chopped
  • ½ teaspoon Fresh rosemary, finely chopped
  • ½ teaspoon Fresh parsley, finely chopped
  • ¼ cup Water or broth or White wine
  • Pinch of Salt and pepper to taste

Instructions

  1. Pat Dry the Fish: Pat the fish fillets dry with a paper towel to remove excess moisture, which helps in getting a nice sear when cooking.
  2. Prepare the Seasoning: In a bowl, combine the Cajun seasoning, salt, black pepper, Italian seasoning, and garlic powder. Stir these ingredients together well.
  3. Season the Fish: Sprinkle the seasoning mixture generously on both sides of the fish. Gently pat the seasoning into the fish so it adheres well.
  4. Heat the Oil: Place a pan over medium heat and add the olive oil. Allow the oil to heat until shimmering but not smoking.
  5. Sear the Fish: Place the seasoned fish fillets into the pan and sear each side for about 5 minutes, depending on the thickness of the fillets, until the fish is fully cooked and flakes easily with a fork.
  6. Remove Cooked Fish: Take the fish out of the pan and set it aside. Discard any burnt bits from the pan to prevent bitterness in the sauce.
  7. Make the Garlic Butter Sauce: Melt the butter in the same pan over low heat. Add lemon juice, hot sauce, fresh thyme, rosemary, parsley, and water (or broth/white wine). Simmer the sauce gently for 2 minutes, adjusting seasoning as needed.
  8. Baste the Fish: Return the cooked fish to the pan. Spoon the garlic butter sauce over the fish, basting for about 1 minute to allow the flavors to meld.
  9. Serve: Remove the fish from the pan and serve immediately with your choice of sides, such as rice, vegetables, or salad.

Notes

  • Make sure to pat the fish dry before seasoning to ensure a good sear.
  • Adjust the hot sauce amount to your preferred spice level.
  • You can substitute water with broth or white wine for a richer sauce flavor.
  • If fresh herbs are unavailable, dried herbs can be used but reduce the quantity to about a third.
  • Serve with lemon wedges for an extra citrusy kick.
  • Use a non-stick or well-seasoned pan to prevent sticking while searing the fish.
