Ingredients
For the cookies:
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup rainbow sprinkles (plus more for rolling)
Instructions
- Prepare the Dough: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, use a hand mixer or stand mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter-sugar mixture and mix until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
- Gently fold in the rainbow sprinkles until evenly distributed throughout the dough.
- Roll and Bake the Cookies: Roll the cookie dough into 1 1/2-inch balls and roll each ball in extra sprinkles to coat.
- Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9-11 minutes, or until the edges of the cookies are just starting to turn golden but the centers are still soft. Don’t overbake!
- Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
