Description

Ingredients

For the crust:

1 1/4 cups all-purpose flour

1/4 teaspoon salt

1/4 cup unsalted butter, cold and cut into cubes

23 tablespoons ice water

For the filling:

4 large eggs

1/2 cup heavy cream (or milk for a lighter version)

1/2 cup shredded cheese (cheddar, Swiss, or a mix)

1/4 cup cooked spinach (or other veggies like mushrooms, bell peppers, or zucchini)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon dried herbs (thyme, rosemary, or basil)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or butter.
  2. In a food processor or large bowl, combine the flour and salt. Add the cold butter and pulse or cut it in with a pastry cutter until the mixture resembles coarse crumbs.
  3. Slowly add 1 tablespoon of ice water at a time, pulsing or mixing until the dough comes together. The dough should hold together when pressed.
  4. Turn the dough out onto a floured surface and gently knead it until smooth. Divide the dough into small portions and press each into the bottom of each mini muffin tin cup, forming a crust that comes slightly up the sides.
  5. Place the tin in the fridge to chill while you prepare the filling.
  6. In a mixing bowl, whisk together the eggs, heavy cream (or milk), salt, pepper, and dried herbs until well combined.
  7. Add the shredded cheese and any optional vegetables (spinach, mushrooms, bell peppers, or zucchini) and stir to distribute evenly.
  8. Remove the chilled crusts from the fridge and carefully pour the filling into each crust, filling each cup almost to the top.
  9. Bake the mini quiches for 15-20 minutes, or until the edges of the crust are golden and the filling is set. You can check doneness by inserting a toothpick into the center of one quiche—if it comes out clean, they’re done.
  10. Once done, let the mini quiches cool slightly in the tin before transferring them to a wire rack to cool completely.
