1/2 cup dark chocolate chips (70% cocoa or higher)
1/2 cup fresh raspberries (or frozen, thawed)
2 tablespoons chia seeds
2 tablespoons honey or maple syrup (adjust to taste)
1/2 teaspoon vanilla extract
Pinch of sea salt (optional, for topping)
Instructions
- Prepare the Raspberry Mixture: In a small saucepan, heat the raspberries over low heat until they start to break down and release their juices. Stir frequently for about 3-5 minutes. Once softened, remove from heat and let it cool slightly.
- Melt the Dark Chocolate: In a heatproof bowl, melt the dark chocolate chips by microwaving in 20-second intervals, stirring in between, until fully melted. Alternatively, you can use a double boiler to melt the chocolate.
- Mix the Ingredients: Once the chocolate is melted, stir in the honey or maple syrup and vanilla extract. Next, fold in the chia seeds and the raspberry mixture, making sure to combine everything thoroughly.
- Shape the Bites: Line a small baking sheet or tray with parchment paper. Spoon the mixture into small bite-sized mounds on the tray, about 1 tablespoon each. Use the back of the spoon to shape them into round, even bites.
- Chill: Place the tray in the refrigerator for at least 30 minutes to allow the bites to set and harden.
