Ingredients
1 cup cottage cheese (low-fat or full-fat)
4 whole wheat or flour tortillas (or gluten-free if preferred)
1 cucumber, sliced
1 bell pepper, thinly sliced
1/4 cup red onion, thinly sliced
1/2 cup baby spinach or lettuce
1 tablespoon fresh dill (or herbs of your choice)
Salt and pepper, to taste
1 tablespoon lemon juice (optional, for extra freshness)
1 tablespoon olive oil (optional, for drizzling)
Instructions
- Slice the cucumber, bell pepper, and red onion into thin strips. Wash and dry the spinach or lettuce leaves. Chop the fresh dill or your preferred herbs.
- In a small bowl, season the cottage cheese with a pinch of salt, pepper, and lemon juice. Stir in the fresh dill or other herbs until the cottage cheese is well mixed.
- Lay the tortillas flat and spread a generous amount of the cottage cheese mixture in the center of each tortilla.
- Layer the cucumber, bell pepper, red onion, and spinach or lettuce on top of the cottage cheese.
- Fold in the sides of the tortilla and roll it up tightly, ensuring the filling stays secure.
- Slice the wraps in half or enjoy them whole. If desired, drizzle with a little olive oil for added richness and flavor. Serve immediately.
