Description

Ingredients

1 cup cottage cheese (low-fat or full-fat)

4 whole wheat or flour tortillas (or gluten-free if preferred)

1 cucumber, sliced

1 bell pepper, thinly sliced

1/4 cup red onion, thinly sliced

1/2 cup baby spinach or lettuce

1 tablespoon fresh dill (or herbs of your choice)

Salt and pepper, to taste

1 tablespoon lemon juice (optional, for extra freshness)

1 tablespoon olive oil (optional, for drizzling)


Instructions

  1. Slice the cucumber, bell pepper, and red onion into thin strips. Wash and dry the spinach or lettuce leaves. Chop the fresh dill or your preferred herbs.
  2. In a small bowl, season the cottage cheese with a pinch of salt, pepper, and lemon juice. Stir in the fresh dill or other herbs until the cottage cheese is well mixed.
  3. Lay the tortillas flat and spread a generous amount of the cottage cheese mixture in the center of each tortilla.
  4. Layer the cucumber, bell pepper, red onion, and spinach or lettuce on top of the cottage cheese.
  5. Fold in the sides of the tortilla and roll it up tightly, ensuring the filling stays secure.
  6. Slice the wraps in half or enjoy them whole. If desired, drizzle with a little olive oil for added richness and flavor. Serve immediately.

Notes

Add grilled chicken, turkey, or tofu for extra protein.
