Ingredients

2 tablespoons milk (dairy or non-dairy, adjust for desired consistency)

Pinch of salt (optional, to balance sweetness)

For garnish (optional):

Chopped peanuts or granola

Chocolate chips or cocoa powder

Fresh berries (such as strawberries or raspberries)


Instructions

  1. In a blender or food processor, combine the cottage cheese, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt (if using). Blend until smooth and creamy. If the mixture is too thick, add milk one tablespoon at a time to reach your desired consistency.
  2. Taste the mousse and adjust the sweetness by adding more honey or maple syrup, if desired. If you want a stronger peanut butter flavor, you can add an extra tablespoon of peanut butter.
  3. If you prefer a firmer texture, refrigerate the mousse for 30 minutes to an hour before serving. This also allows the flavors to meld together.

Notes

For a chocolate-peanut butter flavor combination, add 1-2 tablespoons of cocoa powder or melted dark chocolate to the mousse.

For a fruit-sweetened version, blend in a small ripe banana.

If making this vegan, substitute the cottage cheese with a dairy-free version and use maple syrup.
