Ingredients

1/2 teaspoon cinnamon (optional, for sweet)
1 tablespoon maple syrup or honey (optional)
Pinch of salt
Butter or oil (for greasing waffle iron)
Instructions
- Preheat and lightly grease your waffle iron.
- In a bowl, whisk together cottage cheese, eggs, almond flour, baking powder, vanilla, cinnamon, sweetener, and salt until smooth.
- Pour batter into the preheated waffle iron and cook for 3–5 minutes, until golden and fluffy.

For savory waffles, omit vanilla, cinnamon, and sweetener; add herbs like chives or parsley.

Use all-purpose flour instead of almond flour if preferred (texture will vary).
To go low-carb/keto, use coconut flour instead of almond flour (a smaller amount).
