Description
Cinnamon Roll Blondies combine the sweet, warm flavors of a cinnamon roll with the chewy, gooey texture of a blondie. These bars are the perfect hybrid dessert, with a cinnamon swirl running through a rich, buttery blondie base, topped off with a sweet glaze. They’re perfect for anyone who loves cinnamon rolls but wants a quicker, fuss-free version that can be made in a fraction of the time.
Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ cup unsalted butter, melted
1 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 tablespoons milk
¼ cup unsalted butter, softened (for cinnamon swirl)
¼ cup brown sugar, packed (for cinnamon swirl)
1 tablespoon ground cinnamon (for cinnamon swirl)
1 cup powdered sugar (for glaze)
2 tablespoons milk (for glaze)
½ teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper and set aside.
- Make the blondie batter: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. In a separate bowl, mix the melted butter and brown sugar until smooth. Add the egg, vanilla extract, and milk, and mix until combined. Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Prepare the cinnamon swirl: In a small bowl, combine the softened butter, brown sugar, and ground cinnamon. Stir until smooth and well-combined.
- Assemble the blondies: Spread half of the blondie batter evenly into the prepared baking pan. Drizzle half of the cinnamon mixture over the batter. Use a toothpick or knife to swirl the cinnamon into the batter. Repeat this step with the remaining blondie batter and cinnamon mixture. You should have a beautiful cinnamon swirl throughout.
- Bake the blondies: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The edges should be golden brown.
- Make the glaze (optional): While the blondies are cooling, whisk together the powdered sugar, milk, and vanilla extract until smooth and drizzle over the cooled blondies.
- Serve: Once the blondies have cooled, slice them into squares and serve. Enjoy the cinnamon roll flavor in a bar form!
Notes
For a more intense cinnamon flavor, add an extra teaspoon of cinnamon to the batter or the glaze.
If you prefer a less sweet version, you can reduce the powdered sugar in the glaze to taste.
