Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 tablespoon ground cinnamon
½ cup unsalted butter, softened
1 cup granulated sugar, plus extra for rolling
1 large egg
2 tablespoons instant coffee (or espresso powder)
1 teaspoon vanilla extract
¼ cup brown sugar, packed
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and instant coffee. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be soft and slightly sticky.
- Roll tablespoon-sized portions of dough into balls, then roll each ball in granulated sugar to coat evenly.
- Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are set and the centers are slightly soft. The cookies will firm up as they cool.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
