Description

Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking soda

¼ teaspoon salt

1 tablespoon ground cinnamon

½ cup unsalted butter, softened

1 cup granulated sugar, plus extra for rolling

1 large egg

2 tablespoons instant coffee (or espresso powder)

1 teaspoon vanilla extract

¼ cup brown sugar, packed


Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and instant coffee. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be soft and slightly sticky.
  6. Roll tablespoon-sized portions of dough into balls, then roll each ball in granulated sugar to coat evenly.
  7. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes or until the edges are set and the centers are slightly soft. The cookies will firm up as they cool.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
