Description

Ingredients

1 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup cocoa powder

1 cup hazelnuts, toasted and coarsely chopped

1 cup semi-sweet chocolate chunks or chips


Instructions

  1. Preheat the oven to 350°F (175°C). Spread hazelnuts in a single layer on a baking sheet and toast in the oven for 8-10 minutes, or until fragrant. Let cool before chopping.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder. Set aside.
  3. In a large mixing bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  6. Fold in the chopped toasted hazelnuts and chocolate chunks or chips.
  7. Using a cookie scoop or tablespoon, drop dough onto a baking sheet lined with parchment paper, spacing cookies about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and slightly golden, but the centers are still soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a different flavor, swap hazelnuts for almonds, walnuts, or pecans.
