Ingredients
1 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
¾ cup brown sugar, packed
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
½ cup cocoa powder
1 cup hazelnuts, toasted and coarsely chopped
1 cup semi-sweet chocolate chunks or chips
Instructions
- Preheat the oven to 350°F (175°C). Spread hazelnuts in a single layer on a baking sheet and toast in the oven for 8-10 minutes, or until fragrant. Let cool before chopping.
- In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder. Set aside.
- In a large mixing bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Fold in the chopped toasted hazelnuts and chocolate chunks or chips.
- Using a cookie scoop or tablespoon, drop dough onto a baking sheet lined with parchment paper, spacing cookies about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and slightly golden, but the centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
For a different flavor, swap hazelnuts for almonds, walnuts, or pecans.
